The contents of 2-heptenal and hexanal, the markers of walnut oil quality, were lower in the phenolic extracts stabilized oil after accelerated storage. Therefore, this study suggested that walnut pellicle could be a safe and natural potential source of antioxidants for food stabilization, especially for unsaturated vegetable oils.
